How an Etna Tasting Runs

Ninety minutes to two hours, in a fixed order.

  1. Book a slot and have it confirmed

    Estates run scheduled tastings rather than open cellar doors. Several ask you to state a preferred start time, and the winery confirms it back.

  2. A welcome glass, then the tour

    Almost every estate hands you a white to carry round, then walks you through the tanks, the barrel hall and often a cellar dug well below ground.

  3. Four or five glasses, in order

    Carricante-based Etna Bianco, sometimes a traditional-method sparkling, a rosato, then the Etna Rosso. The white is first for a reason.

  4. Food with every pour

    Sicilian cheeses, the estate's own olive oil, preserves in oil, bread and often a hard-boiled egg. Premium tickets add a soup, a hot course and a cannolo.

How an Etna Wine Tasting Actually Works

The pouring order, the grapes, and which ticket to buy.

An Etna tasting is a booked, scheduled thing — a sommelier, a cellar, four or five glasses and a plate of food — and it runs 90 minutes to two hours. It is not a drop-in cellar door, and that is the first thing to plan around.

The order is always the same, and it matters

White, then often a traditional-method sparkling, then a rosato, then the red.

The reason is practical. Etna Bianco is at least 60% Carricante, high in acid and distinctly saline, and it resets your palate for a red that would otherwise read as thin. Etna Rosso is at least 80% Nerello Mascalese — a thin-skinned, late- ripening grape that pours far paler than anyone expects from Sicily. It has real tannin and structure inside that pale frame; the comparisons reached for are Pinot Noir and Nebbiolo. Judge it on the palate, not the glass. The Etna DOC guide has the full rules.

The premium cellar tasting — $71, two hours, at the estate. The standard cellar tasting — $49, ninety minutes, same estate. A welcome white, a tour of the 25-hectare property and its cellar eleven metres underground, then four glasses with hard-boiled egg, the estate’s own extra-virgin olive oil, preserves in oil and Sicilian cheeses. The most wine for the least money on this mountain.

Neither cellar tasting includes transport

That is the whole reason they cost half what a tour does. Linguaglossa is about 27 minutes from Taormina and a little over an hour from Catania — easy with a car, and someone has to skip the pours. If nobody wants to, book the tour and let a driver handle the mountain road.

What is actually in the glass

Beyond Rosso and Bianco, most estates pour a rosato from Nerello Mascalese — the pale skins that make the red translucent make a genuinely good rosé rather than a by-product — and many now make traditional-method sparkling, which the altitude- driven acidity suits unusually well. If a tasting offers it, take it.

Etna Bianco Superiore is the one to notice on a list: at least 80% Carricante and grown only in the delimited zone within the commune of Milo, on the eastern flank. It is one of the tightest sub-zone rules in Italian white wine.

Where to taste
